How about having a student (that has done QUALITY work):

        use a digital camera to record others in action.

        observe (and record) the class for specific skills as indicated
        by the teacher

        start any clean up procedures that need to be taken care of

        design a challenge,involving the assigment,for others to complete

        access a computer for enrichment or reward

        work on a mind-bender puzzle/activity....

Hope your 8th grade teacher can use some or all of these ideas. I know jr.
high kids need/like to have more than just more work for getting done early.
