Aluminum is a VERY reactive metal (just drop some HCl on it and watch)
which is why it's usually coated with something else. Since a lot of food
is also highly acidic (spaghetti sauce is particularly low pH), I'd guess
that Al cookware has to be coated with something, or it would just bubble
away over time. Is this addressed at all in the controversy over Al and
Alzheimers?
