I have used diatomaceous earth (DE). However, it is not rigid enough to keep its shape if moved. The GEMS "River Cutters" book (grades 6-9) details how students can conduct experiments to model a variety of river flow features. GEMS recommends using DE that is made for swimming pool filtration systems, NOT agricultural (garden) DE. Safety note: If you use it, make sure that the kids don't prepare/use the dry DE. Breathing the dust can be hazardous.
