Hi Suzy
The Snackbook has many beginning ideas for projects, for example the
"modulated laser" (which despite its name does not use a laser at all.) The
students modulate an LED to send a music signal on a light beam.
Another popular activity is to build a one string electric guitar and study
the sounds that it makes.
Ask again and I'll give you more ideas.
