A good reference for the physics of condensation and weather is "Clouds in
a glass of Beer" by Bohrens.
If air moves from high pressure to low pressure rapidly it expands and
therfore cools. In cool air the water molecules move slower and so when
they collide with a cluster of water molecules they add to the cluster
instead of breaking it apart.
